How to Cook Authentic Nigerian Egusi Soup

Egusi soup is one of the most popular and delicious soups in Nigeria, enjoyed by people from all tribes. It is made with ground melon seeds (Egusi) and leafy vegetables, often served with Pounded Yam, Fufu, or Eba.

Ingredients

  • Ground Egusi (Melon Seeds) – The star of the dish.

  • Vegetables (Spinach, Bitter leaf, or Uziza)

Instructions

  1. Prepare the Stock: Boil your meat and stockfish with onions and seasoning cubes until tender. Save the stock!
  2. Make the Egusi Paste: Mix the ground Egusi with a little water or onions to form a thick paste.
  3. Fry the Egusi: Heat the palm oil in a pot. Add the Egusi paste and fry for 10-15 minutes, stirring constantly so it doesn’t burn. This frying step is the secret to lump-free, delicious Egusi.
  4. Add Stock & Ingredients: Pour in your meat stock, water, crayfish, and pepper. Let it simmer.
  5. Add Vegetables: Once the soup has thickened and oil floats to the top, add your vegetables (Spinach/Uziza). Simmer for 2-3 minutes.
  6. Serve: Serve hot with Pounded Yam or Fufu.
